The Oil Press will generate Oil over time, based on the level of the structure as well as the subjects you have assigned. Once the resources have been generated, you will see an Oil icon over the Oil Press that you can tap on to collect it. This will add it to your stockpile, which will then allow all the buildings in your castle to make use of the Oil automatically.
You can increase the productivity of your Oil Press by upgrading them, as well as assigning efficient subjects to them.
